Gujarati cuisine is one of the most exciting and diverse cuisines of India. Influenced by different cultures from time to time, most recipes are vegetarian and are traditional in nature. The dishes tell the tale of Gujarat’s history which is predominantly dominated by Jains, Hindus and Muslims. You will find a hint of sweetness in all their dishes, from savoury to sweet ones. Even the fiercest of all spicy dishes will have a hint of sweetness. Additionally, Gujarati cuisine focuses on fresh ingredients. Due to the large number of Jains present in the state, the Gujaratis have developed a large variety of vegetarian meal options.
Based on food habits, Gujarat can be divided into four zones, North Gujarat, South Gujarat, Kathiawadi, and Kutch. North Gujarat is mostly traditional, with dishes comprising rice, pulses, sprouts, beans, farsan, chutneys and raita. The healthiest of dishes comes from this region. South Gujarat relies on lots of green chillies in their dishes, with fruits and vegetables dominating dishes. Undhiyu and Paunk are very popular here. Methi Masala is famous in the Kathiawadi region. As the region sees harsh winters, Bhakris which are prepared with lots of spices remain a very popular option. Fafda is another favourite here. You will also find many pickles here. Kutch cuisine is the simplest of all, with a lot of dependency on Khichdi, Kadhi, Khaman Dhokla, and Shrikhand.
Globally noteworthy dishes from Gujarat are Dhokla, which is a traditional Gujarati steamed snack, made from fermented rice and chickpea flour. We serve it with green chutney. Along with it, Khandvi is also quite popular. It is made from gram flour and yoghurt, and it is a savoury dish, which resembles small rolls. Thepla is another very famous flatbread from Gujarat, which is made from whole-wheat flour and several spices. We serve it with yoghurt or pickles. It is one of the most popular breakfast and snacking Gujarati dishes.
Some of the other traditional Gujarati foods are Undhiyu, Gujarati Kadhi, Gathiya, Fafda, Dabeli, Khakra, and Rotlo. The most popular sweet dishes include Ghevar, Basundi and Mohanthal.
